Cheesecake Factory's Raspberry Lemonade

Makes 2 quarts

Ingredients:

• 1 cup water
• 1 cup sugar
• 1 cup fresh squeezed lemon juice
• 1 1/2 cups fresh or frozen raspberries
• Extra sugar for sugaring the rim of your glass

Directions:

Bring the cup of water to a boil. Add the sugar and stir constantly for one minute until sugar is thoroughly dissolved; remove from heat and add to a blender with raspberries. Puree until smooth. Add puree to 2-quart container with lemon juice and enough water to make 2 quarts. Chill before serving. Serve over ice in sugared glasses.

To sugar your glass, run one of your lemon rinds around the edge of the glass to moisten. Dip rim into dry sugar until coated to your liking.

Copy Cat Recipe – Starbucks Frappuccino

I have many friends who love their Starbucks.  I found this recipe on Pinterest and thought that many of you would enjoy this.  Let me know how this one turn out!

What You Need

1/2 Cup of Cold Coffee

2 Tablespoons of Chocolate Syrup

1/2 Cup of Milk

1 Tablespoon of Sugar

Whipped Cream

1.5 Cup of Ice

What to Do

Place all ingredients in a blender ( except the whipped cream )

Blend well – pour into a glass and top with whipped cream and enjoy!!

Piña Colada and Peach Smoothies

 

Piña Colada Smoothie

Ingredients:

• 1 small pineapple or 1/2 a medium pineapple
• 1 can coconut milk
• 1 cup pineapple juice
• pinch nutmeg as optional garnish

Directions:

1. Cut off the top of the pineapple with the leaves and slice the pineapple in half, then cut away the outer rind and if the core is hard, then cut it away also.
2. Cut the pineapple into bite sized pieces so it is easier for the blender to puree.
3. Then repeat this for the other half of the pineapple if it is a small one.
4. Place the pineapple in a blender.
5. Add the pineapple juice and coconut milk and blend to a smooth consistency.
6. Taste the smoothie. We prefer smoothies that are not overly sweet, so it was fine this way. If you wish a sweeter smoothie you could add a bit of agave syrup.
7. We sprinkled the top of the smoothies with just a touch of nutmeg.

2 cups fresh orange juice

1 cup peach greek yogurt

2 cups frozen sliced peaches

6 oz Peach Schnapps (optional)

2 oz vodka (optional)

1 tablespoon sugar

1 teaspoon nutmeg

Blend all the ingredients until smooth. Serve on tall cocktail glasses with fresh peach slices (refer to picture).

 Red Lobster Cheddar Bay Biscuits-Top Secret Version

 21/2 cups Bisquick baking mix

4 tablespoons cold butter

1 cup sharp cheddar cheese, grated

3/4 cup cold whole milk

1/4 teaspoon garlic powder

Brush on top

• 2 tablespoons butter, melted
• 1/2 teaspoon garlic powder
• 1/4 teaspoon dried parsley flakes
• 1 pinch salt

Directions:

1. Preheat oven to 400°F.
2. Combine Bisquick and cold butter. Don't combine too thoroughly. There should be small chunks of butter about the size of peas.
3. Add cheddar, milk and 1/4 tsp garlic.
4. Mix by hand until combined, but don't over mix.
5. Drop 9 equal portions onto greased cookie sheet.
6. Bake for 15-17 minutes or until tops are light brown.
7. Melt 2 tbsp butter in a bowl. Stir in 1/2 tsp garlic powder and parsley flakes.
8. Use a pastry brush to spread garlic butter over tops of biscuits.

Copycat Olive Garden Minestrone Soup

 

1 cup minced white onion (about 1 small onion)

1/2 cup chopped zucchini

1/2 cup frozen cut Italian cut green beans

1/4 cup minced celery (about 1/2 stalk)

4 teaspoons minced garlic (about 4 cloves)

4 cupsvegetable broth (Swanson is good *note ( Do not use chicken broth!*)

2 (15 ounce) cans red kidney beans, drained

2 (15 ounce) cans small white beans or 2 (15 ounce) cans great northern beans, drained

1 (14 ounce) can diced tomatoes

1/2 cupcarrot (julienned or shredded)

2 tablespoons minced fresh parsley

1 1/2 teaspoonsdried oregano

1 1/2 teaspoonssalt

1/2 teaspoonground black pepper

1/2 teaspoondried basil

1/4 teaspoondried thyme

3 cupshot water

4 cups fresh baby spinach                    

1/2 cupsmall shell pasta

 3 tablespoon olive oil

Directions:

1. Heat three tablespoons of olive oil over medium heat in a large soup pot.
2. Saute onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
3. Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices.
4. Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
5. Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
6. Makes about eight 1 1/2 cup servings.

Hot Corn Dip:

• 2 cups shredded chedder cheese
• 1 cup shredded Montery Jack
• 2 tbs chipotle peppers in adobo sauce, diced small
• 1 small can (4oz) diced green chilies, undrained
• 1/2 cup Mayo
• 1/4 tsp garlic powder
• 1 11oz can of corn, drained
• 1 small tomato
• 2 tbs cilantro, chopped
• 2 tbs green onions, sliced thin
  

1. Preheat oven to 350 degrees.
2. Mix the cheeses, chiptole and green peppers, mayo, garlic powder and corn together. Pour into an oven safe dish.
3. Bake 20 minutes or until golden brown and bubbly
4. Top with diced tomatoes, green onions, and cilantro. Serve immediately with tortilla chips.

Baked Eggplant Burgers

Burger ingredients:

• 2 teaspoons olive oil, plus more to brush on eggplant before roasting
• 1 red onion, diced
• 1 14 ounce can cannellini beans
• 1/4 cup diced green bell pepper
• 1/2 an eggplant (should equal about 1 cup)
• 1/4 cup chopped fresh parsley
• 1 tablespoon pine nuts
• 1 clove of garlic, crushed
• 1 teaspoon sea salt
• 1 teaspoon ground cumin
• 1/2 cup classic hummus (or your favorite flavor hummus)
• 1 cup panko breadcrumbs
• tomato, sliced for topping (optional)
• lettuce, for topping (optional)

To make the burgers, preheat your oven to 450 degrees Fahrenheit.
Roast the eggplant by cutting it into 1/4″ slices and brushing each side with olive oil.
Bake for 10 minutes on one side, then flip the slices and bake for another 5 minutes.

 

 

While the eggplant is roasting, place the diced red onion and 2 teaspoons of olive oil in a skillet and cook over medium heat, stirring often, until the onion softens.
Once the eggplant is done and you remove it from the oven, turn the oven down to 400 degrees Fahrenheit.

Place the eggplant, onion, beans, bell pepper, parsley, pine nuts, garlic, sea salt and cumin into a large bowl.

Add the hummus and stir.

Place the mixture into a food processor and blend everything together. It should only take about 15 seconds.

Pour the mixture back into a bowl, stir in the breadcrumbs, and use your hands to make four large patties.
Line a baking sheet with aluminum foil and spray the foil with olive oil or nonstick cooking spray.

Place the patties on the foil and bake for 45 minutes, turning them over halfway through.
While the burgers are baking, make the tahini sauce by tossing all of the ingredients into a food processor and blending until fully combined.
Remove the burgers from the oven and eat!

Here is the recipe for the tahini sauce in case you decide to go that route.

Tahini Sauce ingredients:

• 1/3 cup sesame tahini
• 1/3 cup water
• 1/4 cup plus 1 tablespoon fresh lemon juice
• 2 garlic cloves, chopped
• 3/4 teaspoon sea salt

 

Here’s a burger topped with hummus instead of tahini sauce.

Both versions are so delicous. Maybe try one of each? Or two of each?
