It's summer time and there are plenty of fruits and vegetable available at low prices. It you are a gardener, you should be reaping some of your vegetables now. My husband brought home some eggplant and I was somewhat apprehensive about what to do with them. Eggplant is one of those vegetable that you admire from afar.
Since cooking is one of my passions, I decided that I would find ways to utilize the bounties of the garden. I decided that I would roast these egg plants, so here we go!
Roasted Eggplants
Eggplants
Olive oil
Black pepper
Cajun seasoning
Monterey Jack cheese
Pasta sauce
Tomatoes
Direction:
1. Slice up each eggplant; about 1/2 inch thick.
2. Lay slices on a greased baking sheet.
3. Brush slices with olive oil.
4. Sprinkle pepper, parsley and
5. Bake slices in oven at 400 until brown and tender
6. Arrange the roasted eggplant slices on a greased baking pan or sheet.
7. Layer with sliced tomatoes, then cheese slices.
8. Layer with eggplant slices and finally cheese slices. Bake in oven at 400 degrees for about 10-15 minutes or until the cheese melts.
Slice eggplants in desired thickness
Sprinkle garlic powder, parsley and cajun seasoning.

On a greased pan, arrange roasted eggplant slices.
Layer the eggplants with slices of tomato then slices of Monterey Jack cheese
Top with some pasta or marinara sauce. Bake in the oven at 400 degrees for about 10 - 15 minutes; just enough time until the cheese start melting.
The finish product. I actually enjoyed this dish. You could omit the sauce. if preferred. This has a meaty taste and it was quite delicious. This is a perfect dish for those who are trying to reduce the amount meat from their diet.
