Recipes - Father's Day

Hre are a few recipes specially for Father's Day.  Show him you care, treat him to special dishes!!

Strawberry, Mango, and Yogurt Smoothie

Yield Serves 2
Ingredients
  • 1 1/4 cups apple juice
  • 1 cup low-fat plain yogurt
  • 1 cup fresh or frozen strawberries
  • 2 cups fresh or frozen mango chunks
Directions
  1. In a blender, combine all ingredients and puree until smooth.

Bacon, Egg, and Toast Cups

Prep Time 15 minutes
Total Time 35 minutes
Yield Makes 6
Ingredients
  • 3 tablespoons unsalted butter, melted
  • 8 slices white or whole-wheat sandwich bread
  • 6 slices bacon
  • 6 large eggs
  • Coarse salt and ground pepper
Directions
  1. Preheat oven to 375 degrees. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, with a 4 1/4-inch cookie cutter, cut into 8 rounds. Cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. Use extra bread to patch any gaps. Brush bread with remaining butter.
  2. In a large skillet, cook bacon over medium, until almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1 bacon slice in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.

Ingredients

  • 2 cups ketchup
  • 1 cup packed light-brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cider vinegar
  • Coarse salt and ground pepper
  • 6 pounds chicken drumettes, patted dry

Directions

  1. In a medium bowl, whisk together ketchup, sugar, Worcestershire, and vinegar; season with salt and pepper. Set aside 1 cup sauce for tossing raw chicken; use rest for baked chicken.
  2. Preheat oven to 450 degrees, with racks in upper and lower thirds; line two rimmed baking sheets with aluminum foil.
  3. Divide drumettes between baking sheets, and toss with reserved 1 cup sauce.
  4. Bake chicken until opaque throughout, 30 to 35 minutes, rotating sheets and tossing chicken halfway through. Toss baked drumettes with 1/2 cup sauce, and serve with remaining sauce on the side.
