Winter is over but Chili is still a great Saturday dish. This is a very easy and filling dish; the family will enjoy. Also, a great way to introduce peas/beans to the young ones. Try this out!
THREE BEAN CHILI
Ingredients
1 Tbp vegetable oil
1 medium onion - chopped
1 Red Pepper - chopped
3 Garlic Cloves - minced
1 (14.5 OZ) can petitie diced tomatoes, undrained
1 can tomato paste
1 can tomato sauce
1/2 teaspoon dired oregano
8 ozs turkey meat (can substitue meat of your choice)
1 can cannellini beans, drained
1 can dark kidney beans
1 can light kidney beans
1/2 can whole kernel corn
1/4 tsp pepper
1 tsp ground cumin
4 oz shredded cheddar cheese
1/2 bottle of beer
Direction
Coat large saucepan with vegetable oil, place over medium-high heat until hot.
Add turkey meat and brown for about 5 minutes.
Add onion, red peppers and garlic; saute for 2 minutes or until tender.
Stir in tomatoes, beans and all other remaining ingredients (except cheese). (Add chile pepper to taste.
Cook for about 5-10 minutes
Ladle into bowls and top with cheese.
Servings - 6-8
